Raspberrry Lemonade Ice Cream Cake



This recipe is sooo easy yet tastes sooo yummy and fancy.  I use it all the time for friends birthdays and it's always a huge hit!  Here's what you need


1 gallon vanilla ice cream
1/2 can of frozen lemonade concentrate
14 graham crackers
1 cube butter
1 small bag of frozen or fresh raspberries for topping
Spring Form Pan (ideal but not a necessity)

First pull your ice cream out of the freezer and let it sit for a 1/2 hour or so to soften.  Blend the concentrate and ice cream together until all the lumps are gone


Then spray the cake pan, mix your graham crackers and butter and press into the bottom of the pan with your hands.

Then carefully pour the ice cream mixture over top and put the whole thing back in the freezer for a few hours or over night.  If your using a
Spring Form Pan, you should be able to just open the latch and the cake will come out in a beautiful form.  This is the only kind of pan I use for making any sort of cake.  I bought a set with 3 different sizes and use it all the time!

Top the cake with raspberries and your good to go!  It's soooo surprisingly good and refreshing!!
